Mmmmm.....Summer

I love summer time because I love to cook on my grill.  I am one of those few folks that grills all year around, even when it snows.  I love when summer comes because I don't have to wear a coat, hat and gloves to make dinner!  So, go ahead and throw some sausages, steaks or chicken on the grill and try out some of these delicious corn on the cob recipes.

Grilled Corn on the Cob

I have a variety of rubs and seasoning mixtures for corn on the cob.  I love fresh corn on the cob during the summer because it tastes delicious and you can get quite alot of it for a picnic or dinner for very little money. Currently you can buy a dozen ears for $1.89 here at my local market. 

Always soak your corn in a large tub, bucket, or sink of water for at least an hour.  Soaking the corn prevents the husks from burning to quickly or catching on fire.  Unless otherwise directed, peel the husk back from the corn (leaving it attached at the end like a bananna).  Remove the corn silk and place in the garbage.  Do NOT try to put corn silk down the drain or in the diposal or you will have big problems and a large plumbing bill.  Apply seasoning or butter mixture to corn, fold the husk back up.  Place corn on the top rack of a medium high grill and grill around 20 minutes (turning occasionally) or until done.

Here are some of my favourite recipes for grilled corn:

Southwestern Grilled Corn
1/3 cup of butter
2 tablespoons of snipped cilantro
1/4 teaspoon of salt
1/4 teaspoon of ground red pepper
6 fresh ears of corn

Melt the butter and stir in cilantro, salt, and ground red pepper. Baste and grill.

Chili Roasted Corn on the Cob
2 teaspoons chili powder
1/2 teaspoon of salt
1/2 teaspoon of ground cumin
1 tablespoon of butter
6 ears of corn


Melt butter and stir in chili powder, salt, and cumin.  Baste and grill.


Cajun Grilled Corn on the Cob

1 teaspoon of dried oregano
1 teaspoon of paprika
3/4 teaspoon of garlic powder
3/4 teaspoon of onion powder
1/2 teaspoon of salt
1/4 teaspoon of dried thyme
1/4 teaspoon of black pepper
1/8 teaspoon of ground red pepper
2 teaspoons of butter, melted
4 ears of corn

Combine first eight ingrediants in a bowl and set aside.  Brush corn with butter and then sprinkle with spice mixture.  Grill.


Jerk Grilled Corn on the Cob
3/4 teaspoon of allspice
1/2 teaspoon of thyme
1/2 teaspoon of ground cinnamon
1/2 teaspoon of salt
1/2 teaspoon of black pepper
1/4 teaspoon of ground nutmeg
1/8 teaspoon of ground red pepper
2 teaspoons of butter, melted
4 ears of corn

Combine first seven ingrediants in a bowl and set aside.  Brush corn with butter and then sprinkle with spice mixture.  Grill.


North African Grilled Corn on the Cob
2 teaspoons of ground cumin
2 teaspoons of ground coriander
1 teaspoon of dried oregano
1/2 teaspoon of ground ginger
1/2 teaspoon of salt
1/4 teaspoon of ground cinnamon
1/4 teaspoon of black pepper
dash of ground cloves
2 teaspoons of butter, melted
4 ears of corn

Combine first eight ingredients in bowl and set aside.  Brush corn with butter and then sprinkle with spice mixture. Grill.
