Winter is a cold and blustery time of year.  After the holidays there are Super Bowl parties to hold, Valentine's Day treats to make, Chinese New Year celebrations and the general snowy day meals designed to make you feel warm all over.  The following are some of my favourite winter time and cold weather recipes....


Mr. Deadman's Chili - My home made chili recipe for hubby.  GREAT for snowy days.

1 pound of hamburger
1/2 a yellow onion, diced
1 bottle of Corona Beer
Garlic Powder
Carrol Shelby's Chili Kit
1 can of Hunt's Seasoned Diced Tomato Sauce for Chili
1 can of Rotel diced tomatoes and green chilis
2 cans of Hunt's Tomato Sauce (15oz)
1 can of Bush's Chili Magic Texas Style Beans (Medium)

Brown the hamburger.  While burger is browning sprinkle liberally with garlic powder on all sides.  Add three "glugs" of beer to the beef and garlic powder and continue to cook until pink is gone.  Drain the grease and then add the seasoning packet and the WHOLE cayenne pepper packet from the Chili Kit.  I usually toss the salt and mesa packet in the garbage since hubby doesn't like it thick.  Stir and then add the remaining ingrediants - tomato sauces, diced tomatos and beans.  Stir well and cook for about two hours on low heat stirring occasionally.

Serve with fresh cornbread and sprinkle chili with additional diced onions for garnish.


BAM!burgers
This is a recipe I got off one of the Super Bowl Party cards inside a case of Coke.  It is a recipe from Emeril Legasse.

1 pound of ground beef
1 tablespoon of prepared horseradish
1 tablespoon of minced garlic
1 teaspoon of salt
1/2 teaspoon of fresh round black pepper
4 slices of Harvarti cheese
4 Onion or Kaiser rolls, split in half
2 tablespoons of unsalted butter
Condiments - mayo, mustard, ketchup, sliced onions, etc

COmbine the beef, horseradish, garlic, salt, and pepper in a medium mixing bowl.  Mix gently but thoroughly.  Divide the mixture into four equal portions, form into balls, and flatten slightly to form 3/4 inch thick patties.

Grill the burgers or cook in a skillet for two minutes.  Flip the patties over and place one slice of Havarti cheese on each patty.  Cook for two minutes more for medium rare burgers, or longer if you wish.  Transfer to a platter. 

Spread both sides of cut roll with butter.  Toast them on the grill or in the skillet for about 30 seconds.  Put the burgers on the buns and serve immediately, with the condiments.


Strawberry Bruschetta - a great breakfast treat for your Valentine

Several 1/2 inch thick slices of crusty Italian or French bread
2 tablespoons of melted unsalted butter
1 1/2 tablespoons of sugar
1 1/2 tablespoons of cinnamon
12 large strawberries cut into a very fine dice
3 - 4 tablespoons of plain yogurt
Honey

Preheat oven to 375.  Toast bread slices in oven until golden.  About ten minutes.  Brush toasts with butter on one side.  In a small bowl combine sugar and cinnamon and sprinkle this evenly over buttered side of each toast.  Broil toast about five inches from heat under the broiler for about 30 seconds or until bubbly.  Cool toasts.  In a bowl stir together strawberries and the remaining 1/2 tablespoon of sugar.  Place a spoonful of mixture on each toast and top with a teaspoon of yogurt and then drizzle with honey.


Chinese Egg Drop Soup with Noodles


4 cups of chicken broth
1 teaspoon of soy sauce
2 tablespoons of medium-dry sherry
2" piece of fresh ginger thinly sliced
1 garlic clove crushed
1 cup of dried fine egg noodles
2 large eggs, lightly beaten
2 scallions, sliced thin
1 1/2 teaspoons of sesame oil


Gung Hei Fot Choi!


Bring broth, soy sauce, sherry, ginger, and garlic to a boil in a large soup pot.  Remove ginger and garlic with a slotted spoon and discard.  Stir in noodles and simmer uncovered until they are tender.  As you stir the soup in a circular motion, pour in eggs in a slow and steady stream.  Simmer undisturbed until egg strand is cooked (about one minute).  Remove from heat and stir in scallions and sesame oil (to taste).
